"The secret to the best Chinese fried rice is onions, garlic and sesame oil, you may add in cooked chicken, beef, pork or shrimp, also you may add in some frozen thawed peas or fresh sauteed or canned mushrooms, whatever you have handy in your fridge! --- for this recipe it is best to use slightly undercooked rice that is more firm that soft the best recipe is the firm option on my recipe#350260 the amount of egg does not matter, if you like lots of egg then use as many eggs as desired, if you like a little heat then add in some cayenne pepper, I most always do you and you will probably need to adjust the soy sauce to your liking --- you will love this rice!"

  • 3 eggs (or use as many eggs as desired)
  • 1 tablespoon water
  • 1 tablespoon butter
  • 2 -3 tablespoons oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, coarsely chopped (or use as much garlic as you desired)
  • 4 cups cold cooked white rice
  • 4 tablespoons soy sauce (more to taste)
  • 1 teaspoon sesame oil (you could omit but it is best to add in)
  • 12 teaspoon fresh ground black pepper
  • 2 green onions, finely chopped (optional)

  • In a small bowl beat the eggs with water.
  • Melt the butter in a large skillet or a wok over medium heat or until sizzling.
  • Add in eggs and leave flat for about 2 minutes or until cooked through; remove to a plate then chop.
  • Heat oil in the same skillet; add in onion and saute until softened (about 3-4 minutes, adding in the garlic the last 2 minutes of cooking time).
  • Add in cold rice, soy sauce, sesame oil and black pepper; stir-fry tossing continuously for about 5 minutes (adding in more soy sauce and black pepper if needed to suit taste).
  • Stir in the egg and green onion.

  1. I made a batch of this for my bento lunches and I am so happy I did! The flavour is fantastic...my kids and my husband started eating it straight out of the wok. I had to tell them it was for future lunches. The success of this recipe truly relies on using sesame oil and a top quality soy sauce. I prefer Kikkoman as I've found it to be the best flavour.<br/>I added shredded carrots, mushrooms and a few bean sprouts. I now have the perfect fried rice recipe...thanks for posting, Kittencal!! Another winner from you. :)

  2. This was a great aned easy recipe. I made this last night and my husband said it was better than the rice we get in the chinese restaurant. I put frozen peas in the rice. Next time I'll add left over chicken or beef to the recipe along with diced carrots.. I used the sesame oil its a must what terrific flavor it gave the rice. I will be using this recipe alot.

  3. Yummie!! Really good and really easy. When i finished the rice I added chicken, shredded cabbage, sugarsnaps and bellpeper (from wok) and instead of soyasaus I used some homemade teriyaki sauce that was leftover.. Tasty and a kidpleaser too, very important ;o), thanks Kittencal

  5. Add me to the believers of this recipe. I could never get fried rice right and didn't often try because of it. Thanks for this great recipe! The only thing I changed - I diced chicken (about 1.25 pounds), 1 can of water chestnuts, sliced a cup or so of cabbage and a tiny onion, and marinated it in stir fry sauce an hour or two before cooking. I made for 12 (entree portions) and it fed 6 adults a dog with a bit left over. I prepared 2 cups of dry rice and the ratio turned out well. It was a super lot of egg which was fine by me but if you are not all too fond of the egg in fried rice, I wold suggest cutting it in half.

  1. I added fresh mushrooms and frozen mixed vegetables after I sauted onions and garlic. Then I also added cayenne pepper for some heat.

  2. This is so good! I made it to have with Recipe#301466 and it was a great combination! I make mine very similar to this, but the addition of the garlic and sesame oil is what put this over the top for us! I only used 1 clove of the garlic (personal choice) and skipped the butter to cook the eggs in using just a shot of cooking spray instead. Such a great flavor and we loved it! Thanks for posting another winner Kitten! :)

  3. This was quite good! The black pepper really took it over the top for me--it has just enough kick to be interesting but not enough to make DH complain LOL! I was also quite generous with the garlic. This is a really versatile recipe; I used pre-cooked salad shrimp instead of chicken and added some sliced mushrooms bamboo, though next time I think I will go with water chestnuts and more veggies in general. I also agree with QueenVic that ginger would be good in here; I just didn't have any on hand. I was very pleased with how quickly the dish came together. Thanks for posting a definite keeper! Made for 123 Hit Wonders.
