Finding healthy, easy snacks to use on the AIP diet isn't always easy. This key lime pie coconut date ball recipe is super easy with only 4 ingredients and 10 minutes of prep time. They're paleo, AIP friendly, gluten-free, dairy-free, vegan, and whole 30 compliant.

They're sweet and refreshing and super portable and convenient. You can also make a bunch of them pop in the freezer for a quick snack whenever you need it. I like to portion them out with 3 or 4 balls in a small zip lock bag or small container so I can just grab and go! These also happen to be a Noom-friendly recipe.

Coconut Date Ball Ingredients

Dates- Dates work so well for so many things. They add natural sweetness and are great for binding things together.

Coconut Flakes- Be sure to go with unsweetened.

Lime juice- Start with about 3 tbsp of lime juice and add a little more as needed based on your tastes.

Coconut Flour- This helps with binding as well and absorbs the moisture from the lime juice.

Optional Protein- Add a little collagen powder to make these into protein balls. Collagen is such an easy way to sneak protein into foods because it has no flavor and such a fine texture that it just blends right in. It's also of course great for healing the lining of the gut.

Storage

These will keep fresh in the fridge for up 3-4 days in a tightly sealed container and about 3 months (possibly more) in the freezer.

These key lime pie energy balls are so delicious and only require 4 ingredients and 10 minutes to make. Plus you can freeze them, so they’re perfect for meal prep.

Ingredients

  • 10 medjool dates (about 3/4 cup)
  • 1/4 cup unsweetened shredded coconut
  • 3-4 tbsp lime juice (3-4 limes)
  • 1/4 cup coconut flour

Instructions

  • Combine all ingredients in a food processor and blend into small crumbles.

  • Pour the mixture onto a sheet of parchment paper and use your hands or the parchment paper to press the mixture into a dough ball. Pull small pieces off and roll into balls.

  • Enjoy!

Notes

Store in an airtight container in the fridge for 3-4 days or in the freezer to up to 3 months.

    Easy and delicious! Lime juice gives them a nice tart, kick. I made a batch yesterday and used lemon juice and a bit of lemon zest in place of the lime juice. Also great! Thanks for this simple, AIP compliant treat!
