Can you tell me that I have a serious Fall food bug? Yea, I’m making it pretty obvious huh? Well, I can’t help it, darn it! All I need is for the leaves to start changing colors and I am going to be incomplete Fall heaven! This is my favorite season, you know? The weather is perfect the way I like, the fashion is awesome, and it is just completely beautiful to see the leaves change. Not to mention all the holiday festivities. Now that I’m having a kid, I’m only going to go more nuts around this time of year. Yes, ya’ll! Prepare to see future blog post for me about fun things to do with your kids around the holidays and the fun torture I’m going to put my family through. Just call me the African-American version of Monica from “Friends”. That is me!

I got it honest. My grandmother on my mother’s side, Daisy Nared, was a HUGE traditionalist! Around this time of year, she was all over creating memories and getting the entire family involved. One of the most awesome memories I have is going to the Pumpkin Patch, drink warm apple cider, and pick out a big fat pumpkin. We would then go back to the house, my mom would scoop out the seeds of the pumpkin, and roast them in different seasonings. Awww, memories. I cannot wait to do some of the same things with my kid(s) (there will be one more to join the Washington crew in couple of years…God willing). I feel establishing memories and traditions within the family can only lead to happy children, which will then turn into happy adults. I mean look at me!

Okay, now to the Apple Pumpkin Turnovers Recipe.

It took me two tries to get this recipe just right. I wanted to incorporate every Fall flavor possible into one bite! I think I did that pretty good in my Fall Inspired Fruit Pizza, but I really did it with this Apple Pumpkin Turnovers Recipe! At first, I wasn’t sure about adding pumpkin and apple together. But I was successful with my Upside Down Apple Pumpkin Cake so what would make this turnover recipe so different? I don’t know what made me doubt myself because these Apple Pumpkin Turnovers were “everything” (this means “all of that and a bag of chips”). You know what you need to do? You need to make these for your family one morning, have some warm Apple Cider, and head off to the Pumpkin Patch nearest you. In fact, you should do that every year! Establish your own family memories and traditions, but start with these first!

Description

This Apple Pumpkin Turnovers Recipe will make you fall in love with Fall every year! This is a super easy recipes full of all the flavors of Fall that is sure to make you happy!

Ingredients

  • 3 Puff Pastry Sheet, thawed
  • 45 small Gala Apples, peeled and diced
  • 4 tbsp. butter
  • 2 tbsp. apple cider
  • 1 1/2 tbsp. light brown sugar
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1 c. pure pumpkin puree
  • 1 tsp. pumpkin pie spice
  • 1/4 c. sugar
  • 1 tbsp. brown sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • pinch of salt
  • 1/4 c. pecan pieces
  • 1/2 tbsp. water
  • cinnamon sugar for sprinkling
  • GLAZE
  • 1 1/2 c. powdered sugar
  • 3 tbsp. butter, melted
  • 1/2 tbsp. milk
  • 1/2 tsp, maple extract
  • pinch of salt

Instructions

  1. Using a medium saucepan on medium-high heat, melt 4 tbsp. butter. Once the butter has melted add the diced apples and allow to cook for 5-7 minutes (the apples will release its liquid and you want to wait until it reduces, about 5-7 minutes). Next, add the apple cider, brown sugar, and vanilla extract. Stir and allow to caramelize for about another 5-7minutes. The mixture should be nice and thick. Set aside and allow to cool.
  2. Preheat the oven to 350 Degrees.
  3. In a separate bowl, mix the pumpkin puree, pumpkin pie spice, sugar, brown sugar, vanilla extract, 1 egg, and a pinch of salt. On a lightly floured surface, unfold the puff pastry, and lay it flat on a surface. Cut into four squares and separate them for easy use. Take a spoonful of the pumpkin mixture and spread over the puff pastry square; take a spoonful of apple mixture and spread over the pumpkin mix; lastly, sprinkle with pecans.
  4. Fold the turnovers where one corner of the turnover meets the other corner making a triangle shape. Place on a baking sheet that is lined with parchment paper or aluminum foil. Spray with baking spray.
  5. Whisk the other egg and water and brush the mixture on top of the turnovers. If desired, sprinkle the tops with a little cinnamon sugar. Bake in the oven for 25-30 minutes, until the tops are golden brown and puffed.
  6. While the turnovers are baking, make the glaze by adding powdered sugar, melted butter, milk, maple extract, and a pinch of salt. Mix and cover with plastic wrap until ready to use. Once the turnovers are cooled, drizzle with glaze and allow to set and serve!

    You say add egg to pumpkin puree and also brush top with egg but only call for 1 egg??

    It calls for 2 eggs divided, then you say to add eggs, just the whites?
